Default Replacing Poly-B with Pex tubing

I have a 1994 Hilo FunLite 21FLL.

I just had the inlet tube burst when checking out all systems before going on a camping trip.

I have placed new pex tubing and connectors over to just where the water pump is.

I was wondering if anyone has replaced their entire interior plumbing system with pex and how that went trying to remove and reinstall the tubing to all the fixtures?
