Now don't freak out about the avocados, because this is yummy! This is a healthier/raw version of chocolate pudding than the one your mama made. I'll make this about once-a-week for the entire family. VERY easy.....
3/4 c. milk (cow's milk, almond milk, coconut milk etc...your choice)
3 avocados
3 TBSP cocoa powder
5 or 6 TBSP sweetener (maple syrup, honey, or I use a combo)
splash of non alcoholic vanilla
pinch of sea salt.
Mix all of the above in a blender or food processor. Takes less than five minutes.
If you have a high-speed blender, such as a Vita-Mix, you can even add fresh spinach to get greens in there, and no one is the wiser. If you don't have a Vita-Mix, a Magic Bullet, although a toy in comparison, does a pretty good job.Also, if you have a high-speed blender, you can make your own vanilla cheaply! Cut up 3 vanilla beans per cup of water, and blend on high for a minute or two. Will keep in your fridge for a week or two.
