I've followed instructions and watched videos on YouTube, something must be plumbed wrong, anyone else have this problem?

We are in the process of purchasing a '21 Salem Hemisphere 27RL. The fresh water tank has a hose fill similar to the city water connection. Our last camper just had a cap with an open fill. Is there an overflow somewhere to let you know when it is full?
