We have been wanting to build a chuck box for the picnic table for a long time. Researching I kept thinking what if we put the box on the side of the trailer as a slide out.

That's a nice bit of work, but I'm having trouble understanding how you would mount it as a "slide out". What space is it going to go into? And, would it have to stay out while you were camped (all the time)? Would it be "weatherproof"?

The kitchen box will slide in or out when camping. There will be a weather proof door to the box. When traveling it will be covered by the top half. When camping it will be covered by the awning. The box has been sealed with polyurethane. The box occupies the unused space below the full size mattress in the back.
